Vegetable Biryani

Biryani is a dish that mixes aromatic spices with rice and combination of veggies or meat. It is quite popular across the Indian subcontinent and it is one-pot mean. It is so delicious that you cannot refrain youself from indulging in its mouth watering taste. Biryani with raita is a perfect meal option. Biryani was brought to india by Arab and Mughal emperors and then it bloomed in India, into multiple versions depending on region. These versions vary by the type of rice, the vegetables used and the type of meat used! But, still the end-product is super yummy 🤤.

While preparing biryani rice and vegetables/meat are cooked separately - though not completely but partially. And then we arrange them in layers one above the other in a pot with thick base and later cover the pot with heavy lid.

Generally, a hell lot of ghee is used while preparing biryani and hence some people consider it to be unhealthy. But, as our primary goal is to cook healthy and yet tasty food, I am going to share a healthy version of the recipe 😉. You dont need to stock up your kitchen for this dish and you can prepare it quite often too! Let's get started...


  • 2 cups whole grain Basmati rice - washed and rinsed
  • 1 tablespoon desi ghee
  • 3-4 cloves
  • 3-4 cinamon pieces
  • 3-4 cardamom
  • 2 star anise
  • 1 teaspoon cumin seeds
  • 2 Indian bay leaf
  • 1 cup of florets of cauliflower
  • 1/2 cup green peas
  • 1/4 cup carrot cut into small cubes
  • 1/2 cup curd
  • 1 finely chopped tomato
  • 1 finely chopped onion
  • 1 sliced onion
  • 1 cup paneer cubes
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • 1 teaspoon biryani masala
  • 1/2 teaspoon turmeric powder
  • 2 teaspoon common salt
  • 2 tablespoon oil
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped coriander leaves


  • Soak rinsed rice in water for half an hour.
  • After half an hour remove extra water and keep as much water as just to cover the rice.
  • Then add 1 teaspoon salt, desi ghee, cumin seeds, cinamon, cloves, bay leaves, star anise, cardamom to it and cook it partially in pressure cooker.
  • Along with rice, also add caulifalower florets, green peas and chopped carrot in other vessel of the pressure cooker. Do not add water and just steam these veggies.
  • Open the lid of pressure cooker and let the rice cool down completely.
  • Add 1 tablespoon oil to a pan and heat it. Add sliced onion into it and fry it on medium flame until it becomes brown and crispy.
  • Remove the fried onion from the oil and keep it aside. Then add paneer cubes to the oil and fry them until they become light brown.
  • Remove fried paneed cubes from the oil and keep them aside in a plate. Then add 1 tablespoon oil in the same pan.
  • Add finely chpped onion to the oil. Saute it for couple of minutes and add ginger-garlic paste to it.
  • Saute until onion becomes light brown.
  • Then add finely chpped tomato and mix it well. Cover it with lid and cook for about 5 minutes.
  • When tomato starts releasing water, ass 1 teapoon salt, red chilli powder, turmeric powder, biryani masala and mix it well.
  • Add curd and keep stirring continuosly.
  • After 5 minutes add steamed vegitables and little more than half of the fried paneer cubes and mix it well.
  • Add a small portion of chpped coriander and mint leaves as well as fried onion.
  • Add a layer of boiled rice and spread chopped coriander and mint leaves, fried onion over it.
  • Then add remaining paneer cubes and spread chopped coriander and mint leaves, fried onion over it.
  • Cover the pan with heavy lid and steam the biryani for 10-15 minutes. Open the lid only after you switch off the gas.


  • २ वाट्या आख्खा बासमती तांदूळ
  • १ चमचा साजूक तूप
  • ३-४ लवंगा
  • ३-४ दालचिनीचे तुकडे
  • ३-४ वेलदोडे
  • २ चक्रीफुलं
  • १ टीस्पून जिरे
  • २ तमालपत्रं
  • १ वाटी फ्लॉवरचे तुरे
  • १/२ वाटी मटारदाणे
  • १/४ वाटी गाजराचे चौकोनी तुकडे
  • १/२ वाटी दही
  • १ मोठा टोमॅटो बारीक चिरून
  • १ मोठा कांदा बारीक चिरून, १ मध्यम कांद्याच्या चकत्या
  • १ वाटी पनीरचे चौकोनी तुकडे
  • १ टीस्पून आले लसूण पेस्ट
  • १ टीस्पून तिखट
  • १ टीस्पून बिर्याणी मसाला
  • १/२ टीस्पून हळद
  • २ टीस्पून मीठ
  • ३ चमचे तेल
  • १/२ वाटी चिरलेला पुदिना
  • १/२ वाटी चिरलेली कोथिंबीर


  • तांदूळ धुवून अर्धा तास पाण्यात भिजत ठेवावे.
  • अर्ध्या तासाने त्यामध्ये १ टीस्पून मीठ, साजूक तूप, जिरे, दालचिनी, लवंग, तमालपत्र, चक्रीफूल, वेलदोडा घालून, व तांदूळ भिजेल इतकेच पाणी घालून कूकरमध्ये ३ शिट्ट्या करून अर्धा कच्चा भात शिजवून घेणे.
  • भाताबरोबरच दुसऱ्या एका भांड्यात पाणी न घालता फ्लॉवर, मटार, गाजर ह्या भाज्या सुद्धा वाफवून घ्याव्यात.
  • भात शिजला कि गार होण्यासाठी एका ताटामध्ये उपसून ठेवावा.
  • एका पॅन मध्ये एक चमचा तेल घालून त्यामध्ये उभा चिरलेला कांदा तांबूस परतून घेऊन बाजूला काढावा.
  • मग त्यातच पनीर गुलाबीसर परतून घेऊन बाजूला काढून ठेवावे.
  • एका कढईमध्ये २ चमचे तेल घेऊन त्यामध्ये आले लसूण पेस्ट २ मिनिटे परतून घ्यावी.
  • मग त्यामध्ये बारीक चिरलेला कांदा टाकून मऊ व गुलाबीसर परतून घ्यावा.
  • नंतर त्यामध्ये टोमॅटो टाकून झाकण ठेवून ४-५ मिनिटे शिजवावे.
  • टोमॅटोला पाणी सुटले कि त्यामध्ये १ टीस्पून मीठ, तिखट, हळद, बिर्याणी मसाला टाकून चांगले हलवून घ्यावे.
  • मग त्यामध्ये दही टाकून एकसारखे हलवत राहावे.
  • त्यामध्ये वाफवलेल्या भाज्या व पनीर चे थोडे तुकडे टाकून नीट हलवून घ्यावे.
  • त्यावर चिरलेली कोथिंबीर, पुदिना व तळलेला कांदा टाकावा.
  • मग शिजवलेला भात टाकून त्यावर पुन्हा तळलेला कांदा, कोथिंबीर व पुदिना टाकावा.
  • मग राहिलेले पनीरचे तुकडे टाकून त्यावर परत तळलेला कांदा, पुदिना व कोथिंबीर टाकावे.
  • नंतर त्यावर घट्ट बसेल असे झाकण ठेवून बिर्याणी १० मिनिटे शिजवावी. बिर्याणी शिजवताना हलवू नये.
