In the form of bank statements, saving books or fixed deposit certificates, or - Completed sponsorship form INZ 1025 if your visit is being sponsored by a New Zealand citizen/resident.

Tacos al pastor is a wonderful Mexican dish that uses the beautiful pineapples that are grown all over Mexico. While traditional preparations require cooking over a spit, this recipe has been adapted for the home cook to enjoy using a stovetop.

Thin slices of pork are marinated in a sweet and tangy pineapple based sauce. The chef can control the amount of heat in your taco meat by adding more or less chipotle chile peppers. Chipotles are smoked jalapenos so there is definitely some spice there.


Pambazo is both the name of a Mexican bread and the name of the sandwich made using that same bread. Its name stems from pan basso, a type of peasant bread reserved for the lower classes through history. The bread is commonly dipped in a spicy, pepper-onion-garlic sauce called guajillo, giving the sandwich a unique, bright orange color.

Typically, the sandwich is filled with ingredients such as potatoes, refried beans, avocado slices, chicken, and chorizo sausage, but during Lent, street vendors often substitute the meat with cheese. Pambazos are especially popular in the area of Puebla and Veracruz, and it is said that they make a great light supper, especially when paired with a freshly prepared salad on the side.

Add extra chili powder if you want to turn up the heat.

  • Be cautious of where and what you consume.Street food is a large part of Mexico’s appeal, but wherever your culinary tour takes you, stick to stalls with long lines filled with tourists and locals. Also, take bottled water wherever you go and avoid tap water.

  • Do not overdrink especially when you’re travelling solo. Never accept drinks from strangers, and avoid walking back to your hotel drunk and alone after dark. Sure, this seems like common sense, but after a few shots, your awareness checks out.

  • Avoid being in the wrong place at the wrong time by staying away from places where crimes are committed during the hours in which they are most likely to occur. Kidnappings and carjackings are an issue in some areas of Mexico, so avoid driving at night and stick to major toll roads when traveling from place to place.

  • Unvaccinated travelers should avoid nonessential travel to Mexico.

  • Because of the current situation in Mexico, all travelers may be at risk for getting and spreading COVID-19 variants.

  • A negative viral COVID test or documentation of recovery is required for anyone traveling by air to the United States, including U.S. citizens and legal permanent residents age two and over, and regardless of vaccination status.

  • This order applies to all flights, including private flights and general aviation aircraft (charter flights). A negative COVID test is not currently required for travel by land border.

  • Air passengers are required to take a viral test (PCR/NAAT or antigen test for current infection) no more than three calendar days prior to their flight departure to the United States. Antibody tests are not compliant with the requirement.

  • If you are arriving to the United States via one or more connecting flights, your test must be done in the three days before the first flight in your itinerary, but only if the connecting flights were booked as a single passenger record with a final destination in the United States and each connection (layover) is no longer than 24 hours long.

  • If your connecting flight to the United States was booked separately or a connection in your itinerary lasts longer than 24 hours, you will need to get tested within the three days before your flight that arrives in the United States.

  • CDC requires that air passengers arriving in the United States have a paper or electronic copy of their test result for review by the airline before boarding and possible review by public health officials after arrival in the United States. Passengers must provide written documentation of their laboratory test result (paper or electronic copy) to the airline prior to boarding.
